Aloo Tikki

Ingredients

4 cups of Potato (boiled)
2 Onions (chopped)
1 cup of Beans (boiled and chopped)
Green Chillies (Hari Mirch) (chopped - to taste)
4 tbsp. Raisins (Kishmish)
4 tbsp. Fresh Coriander/Cilantro Leaves (chopped)
2 tsp. Garam Masala Powder
2 tsp. Cumin Powder (Pisa Zeera)
1 tsp. Turmeric Powder (Pisi Haldi)
1 tsp. Red Chilli Powder (Pisi Lal Mirch)
Salt (to taste)
Cooking Oil (for frying tikkis)

 
How to make it:

Add cumin powder, turmeric powder, coriander leaves and salt. Mix well. Filling is now ready.

Mash the boiled potatoes. Add garam masala powder, red chilli powder, and salt. Mix to prepare a dough. Make small balls from dough and flatten each ball.

Put one tablespoon of filling on the flattened ball. Cover the ball with another potato ball and flatten it. Heat cooking oil. Fry flattened tikkis until they turn brown. Serve with plain yogurt and green chutney.
 
Chicken Pakora / Chicken Fritters

Ingredients

325 grams Boneless Chicken Pieces
1 cup of Water
1 medium Onion (coarsely chopped)
3 cloves of Garlic (Lehsan)
2 Green Chillies (coarsely     chopped)
A handful of Fresh Coriander/Cilantro Leaves (Hara Dhania)
125 grams Gram Flour (Besan)
1 tsp. Coriander Powder (Pisa Dhania)
1 tsp. Cumin Powder (Pisa Zeera)
½ tsp. Garam Masala Powder
½ tsp. Red Chilli Powder (Pisi Lal Mirch)
Salt (to taste)
A pinch of Soda Bicarbonate
Cooking Oil (as needed for deep frying)

 
How to make this chicken pakora:

Combine the onion, garlic, green chilies and coriander with half of the water in a blender and blend to a fine paste. In a large bowl combine and mix together the gram flour, coriander powder, cumin powder, garam masala powder , red chilli powder, salt and soda bicarbonate. Combine the blended liquid and the rest of the water and mix well to form a thick paste. Put in the chicken pieces and mix well so that the chicken is well coated with the mixture. Deep fry in hot oil until it turns golden brown. Serve Hot with Ketchup and Pudina Chutney.


 
Fruit Chaat

Ingredients:

1 Banana
1 Apple
1 Pear
2 Guavas
1 Peach
1 Tangerine or Orange
A handful of Grapes
1 Pomegranate (optional)
3 to 4 tbsp Sugar
A pinch of Salt
1 tsp Cumin Powder (Grinded Zeera)
¼ tsp Black Pepper Powder (Grinded Kaali Mirch)
A few drops of Lemon Juice or Orange Juice

How to make this:

In a large bowl, chop all fruit in small pieces. Add sugar, cumin powder, lemon or orange juice, salt, and black pepper powder. Mix well. Any preferred fruits can be used. Although this chaat is ideally made with the following fruits.
