- Leftover rice
- Chopped onion
- Diced carrots
- Green peas
- Whisked eggs

Turn your skillet to medium high heat and pour oil into the bottom of your skillet and add the onion, peas and carrots.Fry this until they are tender.
You can also use other vegetables such as cauliflower, cabbage, broccoli etc.
Slide the vegetables to the side. Pour the beaten eggs onto the other side. Use a spatula to scramble the eggs. Mix them together with the veggies. Add black pepper for flavour.
Now add the rice. Mix it well with the veggie and egg. You can again add some black pepper on the rice. Pour the soy sauce on top and stir until it is heated throughout. Garnish with green onions.
Using leftover ricein the recipe is budget friendly and saves time. However, you can always use fresh pot of steamed rice. It only takes about an extra 20 minutes to prepare.
